A little oil, a whole lot of patience equals delicious results

Have you ever caramelized onions? They are amazing, so creamy, sweet and delicious. It is really super simple but requires a chunk of time and patience. I try to find the biggest Vidalia onions I can. I used 3 for this batch. I use about a teaspoon of olive oil per onion. Then on low heat I let them caramelize stirring them about every 15 minutes. The whole caramelization process took about 2 hours. I was actually out in the back yard with my son and had a timer set for 15 minute increments. When you think they look nice and brown and yummy wait another 30 minutes then they will be done.
We made bacon (turkey), provolone, caramelized onion omelettes with this batch. They were phenomenal!!
